Which networks does it use and how good is the coverage?

It runs on Spark and One NZ, New Zealand's two largest networks, and picks the stronger one automatically. Expect quick, reliable data in Auckland, Wellington, Christchurch and Queenstown, and thinner or patchy service on remote roads, through Fiordland and across the higher mountain passes.

Can I make calls or get text messages on the eSIM?

No, it is data only, so there is no New Zealand phone number and no regular calls or texts on the Simzora line. Keep your usual SIM in the phone to receive bank and login codes by SMS, and use WhatsApp, FaceTime or iMessage over the data connection, which keep working on your existing number.

Can I top up if I run low on data?

Standard plans can be topped up, so you can add more data without redoing your setup. Unlimited-style plans cannot be extended, so once the days are used you simply buy a fresh plan.

Will it work on the Great Walks and the drive to Milford Sound?

On the main highways and in the towns, yes. But New Zealand's national parks and remote coasts have genuine coverage holes, so the Milford road, Fiordland, the Tongariro Crossing and stretches of the West Coast may show no signal at all. Save your maps, track notes and bookings offline before you set out.
