Be realistic about the rest, Mongolia is vast and thinly populated, so once you leave the capital and the main towns the signal thins quickly, and across the open Gobi, the wider steppe and the mountain country you should expect long stretches with a weak connection or none at all.
This is a data-only line, so there is no Mongolian phone number and no local SMS or voice calling on the eSIM. For it to work you need Data Roaming switched on for the eSIM line, which is normal for this kind of plan and carries no extra cost, since the roaming is already included in what you paid. Keep your usual SIM in the phone for anything tied to your own number, such as bank or login OTP codes, and use WhatsApp over the data connection to call and message as you normally would.

When you arrive, if the line shows 'No Service' for a few minutes, turn Aeroplane Mode on and off, or restart the phone, to nudge it onto a local network.
